Chocolate – like many common things around us such as coffee, sugar or potatoes, were discovered twice.
First by the indigenous people - who used in their every day lives and rituals, and second : from the Western world – who did the best it could do - to enslave it, twist it, and change its shape and form so much that you almost
forget where it came from.
To be precise, chocolate was discovered three times.
First by the Indigenous Meso American people, who used to accompany their food
then as an exotic drink, available only to the European elit,
and in the last 150 years as a guilty pleasure by most of us.
So let's begin from where it all started.
The basic ingredient of every form chocolate is cocoa or cacao a term which can be used interchangeably. And by cocoa we mean the seeds of the cocoa fruit.
The first humans to consume cocoa, would eat the fleshy inside of the fruit, or drink its juices.
The seeds were too bitter for them so they spit them away.
This contributed to populate the trees to larger regions, in areas in modern day Colombia and Venezuela.
According to recent discoveries, the first civilization to cultivate and consume cocoa were the Olmecs at around 5300 BC.
From the Olmecs cocoa consumption transferred to the Mayans and then was adopted by the Aztecs.....
