We chat through the farm to fork strategy in the restaurants at Crerar hotels, his various roles in hotels from the commercial side to being a general manager for one hotel and then looking after multiple hotels in a regional role.

We talk through how to manage big projects, the communication to stakeholders, building teams, evaluating teams, taking on a new role and setting expectations and what makes Scotland a unique place to visit and work.
