BONUS 2: Sam's omelette recipe (serves 2 people)

Ingredients: 1 bell pepper, 4-5 button mushroom, 3 eggs, olive oil, salted butter, salt, black pepper, (optional) courgette slices, (optional) cayenne pepper, (optional) parmesan cheese

Method:

  • Cut the bell pepper into thin strips and slice the mushrooms
  • Crack the eggs into a bowl and whisk together
  • Put a medium sized non-stick frying pan on medium heat, add tablespoon of olive oil and wait till it heats up, then throw in the mushroom and pepper.
  • Cook until the pepper is soft then add a pinch of salt and black pepper (you can bit of cayenne pepper if you have it too)
  • Add a knob of butter to the pan and pour in the egg
  • Cook until only the very top layer of the egg is still wet, then with a spatula bend the omelette in half making a semicircle
  • Cook for another minute or two then flip to the other side and cook for another minute
  • Serve as is or with sprinkle of parmesan cheese
