Today we have a really exciting round table discussion with a passionate bunch of awesome mates, each of them legends in their own right, talking about why they all separately chose to pack up their lives in Australia and move to the USA, what differences they experienced in the market, and what opportunities they see in hospitality, coming out of COVID.
Joining me are:
Dan Churchill, one of the world’s most exciting celebrity chefs. He’s a best-selling author, TV host, chef, and co-founder of @charleyst a fast-casual restaurant that serves healthy farm-to-table eats in NYC. In addition to his passion for surfing, Dan is currently in the process of developing his own range of plant-based products.
Eddy Buckingham, a former Melbourne restaurateur, now a New Yorker, the man behind @chinesetuxedo a contemporary Chinese dining experience in Manhattan’s Chinatown which has not only attracted a loyal base of foodies across the city but an A list of celebs. If that wasn’t enough, he recently opened @thetygernyc during the lockdown, pivoting his model to take advantage of the new outdoor dining regulations.
Shaun Quade, is another well-known chef from Melbourne who left his restaurant Lume behind and came to the USA with his partner Veronica Fil, initially to open another restaurant but when he realized there was more interest from investors in what was then a side hustle, @grounded_foods he now focuses his time producing 100% plant-based, cheese-free cheese.
And last but not least, my business partner and legendary Australian restaurateur, Jason Scott, and his dog George. Jason was a co-founder of the Swillhouse Group and creator of top Sydney haunts Baxter Inn & Shady Pines Saloon before packing it all in and moving to NYC to open @grantivoli and @peppis_cellar with me.
