Quintana Roo's Tofu Scramble

There was something about Portland that gave me courage. I don't know if it was the weather, or the fact that I had a job where I was respected, or if it was all that incredible beer (and let me tell you, the beer was OUTSTANDING) or if it was the rain, but it was something. I only wish that I had banked some of that courage for the future.
