„Udržitelnost nemá být jenom póza, časem to bude pro restaurace standard. Restauraci Štangl jsme začali plánovat už v roce 2020. Pět dní v týdnu v ní vaříme moderní českou kuchyni zaměřenou na lokální suroviny. Nová pekárna Eska otevře ve Veletržní ulici na začátku roku 2025 a budou se otvírat další. Bude to pořád náš chleba z pece na dřevo, z toho nechceme slevovat,“ říká šéfkuchař Martin Štangl.
