酸種麵包、酸種麵團及酵母特性

想做好酸種麵包,對於剛開始摸索的朋友確實不是一件容易的事,原因就在於它的種種特質都與一般商業酵母麵包不同,因此不能想當然爾的把過去製作商業酵母麵包經驗套用過來,舉一個最容易造成認知失誤,以至於麵包成品外型不如預期的就是發酵溫度。一般而言使用速發酵母發酵麵團,最理想能幫助菌種繁殖的溫度區間為 《26~28℃》但是天然酵母最理想的發酵溫度其實是落在《20~25℃》。

「酸」是這樣的天然酵母麵包,與商業酵母麵包最大的不同之一,這樣的酸能抑制雜菌增長,讓麵包即使在常溫底下也較不易變質,同時酸也能延緩麵包體的澱粉回凝,但這個酸究竟是什麼?其實也很簡單,主要就是「乳酸菌」,以及伴隨著麵團發酵過程裡自然生成的其他細菌,當然也有當地環境空氣 (空間)......
