This week, we hit up Rubirosa, the Nolita icon serving NYC-style thin-crust perfection since 2010 — and yes, we finally tried the famous Tie-Dye pie.
From the moment we walked in, you could smell that sauce-simmering-all-day energy. The vibes? Cozy, loud, very “I love New York.” The pizza? Crack-level good. Paper-thin crust with that perfect end-of-slice flop, basil everywhere, vodka sauce swirling like art — it’s basically a New York love letter in pizza form.
We posted up, grabbed a couple pies, and did what we do best:
👉 talk food, argue slices, make jokes, and destroy half the menu.
Rubirosa is one of those spots where every bite reminds you why this city stays undefeated. If you’ve ever wondered whether the hype is real — it’s real. And then some.
Another classic in the books. 🍕🔥
