Let me guess. You try really, really hard to eat as many vegetables as you can, as often as you can. And I applaud you for that! The problem you run into is not having them on hand and ready to grab so when you DO want them you’re not spending time prepping them first. The other issue? You know veggies are good for you, but you’re still a bit confused because you’re unsure which is better; potatoes or peas, broccoli or beets, carrots or cucumbers. Seriously, it’s all so confusing!
